Harvest: Second decade of October, by hand, after a summer thinning
Vinification: Destemming and pressing of the grapes, 15 day first fermentation in steel tanks at a controlled temperature of 22-24°C, second fermentation in December-January with grapes from Appassimento and finally third fermentation late in Spring season to prepare the sparkling wine with Martinotti method.
Alcohol content: (average) 12% vol.

Characteristics: Intense ruby red colour with purple hues. Initial balsamic notes such as liquorice and rosemary. Followed by aromas of red fruit, plums and black cherries. Soft and velvety taste, well balanced, with enhanced elegance and sparkling persistence.
Food pairings: cold cuts, porchetta and cheese
Advice: Serve in a tulip glass at a temperature of 6° - 8° C.
