Vinification: natural drying of part of the grapes (5% on
average) for 2 months, destemming-crushing of the grapes,
fermentation in steel with indigenous yeasts for 15 days at
24-26 °C
Maturation and aging: 24 months in oak
Avarage alcohol content in:: 13,5% ABV
Production: 13.000 bottles
Characteristics: ruby red with garnet highlights. Elegant
spiced notes of black pepper, juicy black cherry and plum
jam, a floral hint of potpourri and a balsamic whiff. Very
well balanced, with an integrated tannin and a spiced tasty
long finish
Food pairings: pasta with meat sauce, Carbonara, Cacio e
pepe, roast and grilled meats, legume soups
Serving recommendations: 16 - 18 °C
