We are very proud to preserve the ancient tradition from this land within Monti Azzurri. The wine has triple fermentation and 100% vernaccia nera , the autoctonous grape . The harvest is late in October . Part of the grapes are vinified : first fermentation. Part of the grapes are stored in the "fruttaio" to drying and in december vinified : second fermentation . During the Spring Season , the two wines are assembled starting the third fermentation to have a sparkling wine.
We recommend to serve the wine at 6 to 8 degree , pairing with fresh cuts, cheese and grilled meat.
